Fish in Green Sauce
To prepare this recipe, you will need:
4 white fish fillets
50g extra virgin olive oil
300g onion
2 garlic cloves
100g white wine
500g fish stock
1 teaspoon salt
1 tablespoon cornflour
2 tablespoons chopped parsley
16 cooked prawns
Fish in Green Sauce Dish
Preparation of Fish in Green Sauce:
1. Traditional method for preparing fish in green sauce:
In a saucepan, heat the oil and sauté the chopped garlic and crushed onion.
Once softened, add the wine, fish stock, and salt. Bring to a boil and simmer for about 7 minutes.

If you have a steamer basket, place it in the pan and steam the fish fillets for approximately 20 minutes.

If you don't have a basket, carefully place the fish in the sauce, being careful not to break it. It will cook faster. Once cooked, set the fish aside and add a tablespoon of Santa Rita cornflour to the broth to thicken the sauce. Dissolve the cornflour in a little cold water and cook for a few minutes until thickened.
Add the chopped parsley and stir until well combined.
Serve with cooked prawns.

2. Thermomix:
Place the oil, onion, and garlic in the bowl and chop for 4 seconds on speed 4.
Scrape down the sides of the bowl and cook for 7 minutes at 100°C on speed 1.
Add the white wine, fish stock, and salt, and mix for 8 seconds on speed 6.
Place the Varoma container in position with the fish and cook for 20 minutes at Varoma temperature on speed 4. When the time is up, remove the Varoma container and set aside. To thicken the sauce, add the tablespoon of Santa Rita cornflour dissolved in cold water and cook for 2 minutes at Varoma temperature, speed 2.
Add the parsley and blend for 10 seconds at speed 2.
Serve with 4 cooked prawns.
